Jackfruit Spring Rolls

  • RECIPE MAKES: 4 spring rolls

Step 1

Heat the oil in the deep fat fryer, as per manufacturer instructions.

Step 2

Place the jackfruit in the basket of the deep fat fry and cook for 1 minute or until crispy.

Step 3

Add the cooked jackfruit into a bowl with the pepper, onions and plum sauce and mix until combined.

Step 4

Lay the rice paper down on a chopping board in a diamond shape.

Step 5

Place 2 tbsp of the filling onto the bottom of the rice paper.

Step 6

Roll the bottom point of the rice paper upwards twice and fold in the sides to the middle.

Step 7

Continue to roll upwards, to make the spring roll.

Step 8

Place the spring rolls into the basket of the deep fat fryer and cook for 2 minutes or until crispy.

Step 9

Remove the cooked spring rolls from the fryer basket using a slotted spoon, place on a kitchen towel to drain the oil and serve.

Serving Suggestion:
Serve with plum sauce.

 

Top Tip!
Add sliced chilli for a spicy kick!

  • Oil (as per manufacturer instructions for deep fat fryer)
  • 70g Tinned jackfruit, drained and sliced thinly
  • 1 Red pepper, sliced thinly
  • 2 Spring onions, sliced thinly lengthways
  • 40g Plum sauce
  • 4 Rice paper sheets, pre-soaked to packet instructions
